This perfect blueberry sauce recipe is made with frozen blueberries. It’s perfect served on waffles, french toast, cheesecake, and so many other things!

Blueberry sauce is so easy to whip up and serve with so many breakfast or dessert items. It’s not too sweet, and it adds that fresh, summer flavor that I’m so often longing for! It’s also great to have this recipe on hand in the winter when you’re growing a bit tired of the spices, rich flavors, and heavy textures. In contrast to those heavier winter and fall flavors, this blueberry sauce is light, fresh, and makes you feel like it’s spring outside!

Easy Blueberry Sauce Recipe
I love how easy it is to make this blueberry sauce in a moments notice. Because it’s made with frozen blueberries, you don’t have to worry about having fresh berries on hand for the exact day when you will be making a blueberry sauce! Having simple recipes on hand which use simple, common ingredients is a great way to keep stress out of my meal planning. I’m definitely not a strict meal planner.. I’m really not a meal planner at all I suppose!
I generally look in my pantry and refrigerator and do a little thinking before I go grocery shopping, then I write down a a few potential meals that I could make from the things I already have on hand. I also write down some meals that I’ve been wanting to make recently, and from there I make my grocery list. I may have a ‘plan’ of what I’m going to make for dinner that evening, but if for some reason it doesn’t work out, I just move on to something else! Breakfasts are almost always a spur of the moment decision.. unless I remember to make a sourdough breakfast recipe ahead of time!

How to thicken blueberry sauce
This recipe uses cornstarch to thicken the blueberry sauce. Cornstarch is great for thickening fruit mixtures because it doesn’t give it a weird texture or off flavor! Flour would taste a bit floury, and although I’ve tried cornstarch substitutes like arrowroot powder, I find that they can sometimes give things a slimy texture. Cornstarch is simply the best option I’ve found. It also doesn’t take very much cornstarch to thicken the blueberry sauce!
If you’re in the middle of making a homemade blueberry sauce and want it to be a little thicker than it is, don’t panic. It’s super easy to thicken up a blueberry sauce no matter what stage of making it you’re in. Just place the blueberry sauce in a pot or saucepan over medium heat and bring it up to a gentle simmer, stirring occasionally.
The amount of water and cornstarch you use will depend on the amount of blueberry sauce you have, and how thick you want your sauce to be. I would start with 1 tsp cornstarch for a fairly thin sauce. You can always add more later! In a small container, mix together 2 Tbsp cold water with 1 tsp. cornstarch. Drizzle the cornstarch slurry into the simmering pot of blueberry sauce, stirring constantly. It will thicken up very quickly, so you can determine after about a minute whether you want to make more cornstarch slurry to add to your blueberry sauce. Allow the blueberry sauce to simmer for at least 1 minute before serving to cook the cornstarch properly.

Can you make blueberry sauce ahead of time?
Yes, you can make blueberry sauce up to two days ahead of time without sacrificing the texture and flavor of the blueberry sauce.
Just make the blueberry sauce as directed in the recipe, then store in the refrigerator in an airtight container until you’re ready to serve it. Keep in mind that the blueberry sauce will thicken significantly in the refrigerator, and you will need to reheat it and add a few tablespoons of water to thin it down to the correct consistency.
If you want to serve the blueberry sauce cold and don’t want to reheat it, I would recommend reducing the cornstarch in the recipe to only 1 tsp cornstarch. The sauce will seem thin when it goes in the refrigerator, but once chilled you will have a delicious, thick blueberry sauce which can be served cold!

1 Tbsp Cornstarch
How to Make Blueberry Sauce
In a medium pot, combine the blueberries, sugar, and lemon juice. Cook the berries over medium heat until simmering, and allow to simmer for a couple minutes. All the berries should be soft and juicy.
In a small bowl, mix together the water and cornstarch.
While stirring, pour the cornstarch slurry into the pot of simmering berries. Continue to cook the berries for 1 more minute, stirring constantly.
Remove from the heat and enjoy!
Notes
Store leftover blueberry sauce in an airtight container in the refrigerator. The sauce will thicken up significantly in the fridge, so before serving again, you’ll need to add a few more tablespoons of water to the sauce, and then heat up the blueberry sauce until it is the correct consistency.
