These molasses muffins made with fresh milled flour are naturally sweetened and so moist and flavorful! Great for a healthy breakfast or snack on the go.

I can’t tell you how many times I’ve made these muffins in the last couple months — they’re definitely a family favorite! They have just the right amount of sweetness, and are absolutely irresistible when heated up with a healthy smear of butter.
I enjoy having these in the fridge or freezer for an easy breakfast option, or just a quick snack! Not only do they taste delicious, but you’ll also feel good after eating them because of the incredibly nutritious ingredients.

Naturally Sweetened Muffins
These muffins are sweetened with just apple sauce and molasses, making them the perfect sweet snack for those who are trying to avoid highly processed sugars. Molasses has a strong flavor, so I don’t get the opportunity to use it very often. These muffins are spiced with cinnamon, ginger, and allspice, so the molasses compliments them perfectly.
Although I don’t have anything against using some white cane sugar every now and then, it’s nice to make my homemade baked goods just that bit more nutritious by using natural sweeteners such as honey, molasses, and maple syrup. What wheat berries should I use for making muffins?
I used hard white wheat berries to make the fresh milled flour in this recipe. Both hard white wheat, soft white wheat and other wheat varieties such as einkorn and spelt are great options for things like cookies, muffins, and biscuits!
Soft white wheat and hard white wheat both have a milder flavor than hard red wheat, which is excellent for things like dinner rolls and sandwich bread. I like to have at least both soft white wheat and hard red wheat on hand so that I can easily use the flour that best suits my needs at the time.

Can Molasses Muffins be Frozen
Absolutely! These muffins freeze quite well, and heating them up is as simple as popping them in the toaster oven for a few minutes or in the microwave.
If you plan to freeze these muffins, I would recommend forgoing the paper liners and making muffins in a well-greased muffin tin instead. This way you won’t have the issue of reheated muffins sticking badly to the paper liners.

Ingredients
2 Cups Fresh Milled Flour from Hard White Wheat (200g)
2 tsp. Baking Powder
1/2 tsp. Salt
1 tsp. Cinnamon
1/2 tsp. Ginger
1/2 tsp. Allspice
2 Eggs
1/4 Cup Avocado Oil
1/3 Cup Molasses
1/2 Cup Apple Sauce
1/2 Cup Milk
How to make Molasses Muffins
Preheat your oven to 350 degrees, and grease a muffin tin, or line it with 12 muffin cups.
In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, ginger, and allspice. Whisk thoroughly to combine.
Next add the eggs, avocado oil, molasses, apple sauce, and milk. Whisk the batter until just smooth.
Evenly distribute the muffin batter among the 12 cups (about 1/2-2/3 full).
Bake at 350 for 15 minutes, or until a toothpick can be inserted into the center of a muffin and come away clean or with a few moist crumbs.
Notes
Store in the refrigerator in an airtight container for 3-5 days, or in the freezer for up to 3 months. If you plan to freeze the muffins, I would recommend baking the muffins in a well-greased muffin tin instead of using the paper cupcake liners! Reheated muffins have a tendency to stick to the paper.
