It’s finally spring, and around here, that means loading up on all the fresh spring produce. If you’re frantically searching for ways to use up an abundance of fresh strawberries, you’re in good company. This healthy strawberry smoothie for one is a great way to work strawberries into your morning or afternoon routine!
One of my only cravings this pregnancy has been fruit, which I really can’t complain about! I’ve never gone through fruit so fast in my life during these last couple months. When I saw that strawberries were on sale at a nearby grocery store, I made sure to be there that same afternoon. I could hardly wait! Although.. I may have gone a little overboard.
Strawberry smoothie without milk or yogurt
Although I love dairy, sometimes it takes away from the fresh, fruity taste of a smoothie. That’s why I made this recipe without milk or yogurt. The reason this smoothie is lighter in color is because of the collagen! It makes for a lighter, almost creamy texture because the collagen gets whipped up in the blender and takes on more air bubbles.
There is also no banana in this strawberry smoothie. I personally love the combo of banana and strawberry together, but every once in a while I just want the simple, delicious flavor of fresh strawberries to shine.
Smoothie with Collagen
Adding collagen to a smoothie really makes for a creamier, lighter texture and a rich flavor. However, if you don’t like the taste of collagen, you will probably want to leave it out of this smoothie. It is easier to taste the collagen in this recipe than it would be in a smoothie with milk or yogurt. Without the collagen, you will still have a very delicious smoothie, and you will be able to taste the refreshing strawberry flavor even more! If you do choose to leave out the collagen, I highly recommend using the frozen orange juice cubes tip mentioned down below.
One reason I like to add collagen to my smoothies is that it adds a boost of protein! I like to have protein with most meals/snacks, and this is a simple way to achieve that without having to eat something else with my fruit.
Orange Juice Ice Cubes
One of the best ways to add sweetness and tang to this strawberry smoothie is to think ahead and freeze some orange juice in your ice cube tray! I love how ice cubes add coldness and thickness to a fresh fruit smoothie, but using orange juice ice cubes instead adds such a delicious flavor.
When making a strawberry smoothie without dairy or banana, it works really well to add some citrus. I love orange juice because it makes the smoothie slightly sweeter, and it also makes the smoothie taste SO refreshing and delicious. Perfect for a spring or summer day!
Ingredients:
1/2-2/3 Cup Ice Cubes (or frozen orange juice cubes)
6 Large Strawberries (about 1/2 cup, sliced)
1-2 tsp Honey (to taste)
1 Scoop Unflavored Collagen

Begin by washing and slicing up your fresh strawberries.
Place your sliced strawberries in a small blender, along with the honey, ice cubes, and collagen.
