Biscuits and gravy is one of my all time favorite breakfasts.. or dinners, for that matter! Fluffy, soft biscuits smothered in lots and lots sausage gravy. Biscuits and gravy can easily stand on their own as a meal, but if you want to make it something special, you can also serve it with eggs, bacon, or fresh sliced fruit!
Biscuits and gravy is very a very filling meal, so that’s one reason I like to have it for dinner every once in a while. It’s also a great brunch option for the same reason.

Easy Biscuits and Gravy
This recipe for biscuits and sausage gravy is surprisingly easy to make! I like to make my biscuits ahead of time and have them in the freezer or refrigerator; then all I have to do is whip up this easy sausage gravy recipe. It only uses one pan, and it doesn’t take any unusual ingredients that you won’t already have on hand.
If you want to make things extra easy, you can always use pre-made biscuits and just make the sausage gravy from scratch. There’s nothing like a hearty, delicious breakfast on your table in less than 30 minutes.

Biscuits and gravy from scratch
The sourdough biscuits and sausage gravy in this recipe are made entirely from scratch. I enjoy making my meals from scratch as much as possible because I know exactly what ingredients are going into everything! No preservatives, colorings, or artificial flavors.
I also get to choose the quality of ingredients that I use, which is not only healthier, but I also end up with a tastier product! If you haven’t tried it already, I recommend using grass-fed butter. It has such a delicious, rich flavor; and it’s also more nutritious! I also like to use organic flour in my baking. I’ve actually noticed a huge difference in the way my baked goods turn out when I use organic flour vs when I used non-organic flour. Using organic flour gives my breads a much better texture.

Can sausage gravy be made ahead of time?
I’ve certainly had success making sausage gravy the day before I plan on using it. Sausage gravy will thicken quite a bit as it cools, so as you reheat it you will want to add milk or water until it reaches the desired consistency. You can make this sausage gravy up to two days before you plan on serving it.
Although I’m not sure how well the sausage gravy would freeze, you can certainly make the sourdough biscuits ahead of time and freeze them for future use. Biscuits freeze very well, and they taste super fresh and delicious when reheated.
If you’re in a pinch and want to make biscuits and gravy ahead of time, I would recommend baking your biscuits in advance and freezing them, then making the sausage gravy the day before or day of serving. Thankfully, the sausage gravy is super easy and doesn’t take long to make!

Ingredients
1 recipe Sourdough Drop Biscuits (I recommend doing 1.5 or even doubling this recipe for plenty of biscuits!)
1 lb Breakfast Sausage
1 Tbsp Butter
1/3 Cup Flour
4 Cups Whole Milk
1/2 tsp. Pepper
3/4 tsp. Salt
How to make sausage gravy
Begin by chopping browning your sausage in a large pot or skillet over medium-high heat. Cook it until it is well browned and has a few crispy bits.
If your sausage seems dry, add the 1 tbsp butter and melt it with the sausage. You want your sausage to be very moist and have plenty of grease.
Stir in the 1/3 cup flour. Stir and cook for about 3 minutes.
While stirring, quickly add 2 cups of milk, all at once. Stir and scrape the bottom of the pan until you’re sure there aren’t any lumps, then add the rest of the milk and continue to stir.
Add the salt and pepper, then bring the gravy to a simmer and cook, stirring, for about 5 minutes. Check the thickness of your gravy. If you like it thicker, continue to simmer the gravy until it reaches the desired consistency. If you prefer it thinner, just add a bit more milk.
Serve over hot, fresh biscuits and enjoy!
